    How It’s Made

    Traditional skyr makers began the creation process by adding a bit of an older batch of skyr to strategically heated and cultured skim milk.

    Sometimes, farmers would employ the old-age method of placing a few glasses of skim milk outside and leave them there overnight to capture cultures from the outside air. They would then use the sample that curdled the best as a starter for their new batch of skyr.

    The yogurt that most of the world is used to is made up of mostly water. Unlike these yogurts, skyr is strained in batches using cloth, which eliminates the water in the form of whey. Doing this leaves behind a thicker, protein abundant yogurt.

    Not ones to waste resources, the Icelandic yogurt makers used the leftover whey liquid as an everyday beverage or when pickling other foods.
