Vegan Jackfruit Tahini Sandwich Recipe

If you’ve been playing with the idea of incorporating more plants and less meat into your diet, jackfruit is a good stepping stone. With naturally occurring vitamins and minerals, this fruit may be the meat substitute you’ve been looking for.

What Is Jackfruit?

Jackfruit is a large and internally fleshy tree-growing fruit. When eaten raw, people say it tastes like a cross between a mango and pineapple.

Young jackfruit, however, can be shredded, seasoned and cooked and is often compared to pulled pork both in flavor and overall texture. Give it a try with this delicious sandwich recipe!

Vegan Tahini Jackfruit Sandwich

Ingredients:

“Pulled Pork”:

2 tbsps. tahini

2 tbsps. agave nectar

1 tbsp. tamari

¼ tsp. BareOrganics Cayenne Powder

1 tsp. lemon juice

1 tsp. liquid smoke

2 cups shredded jackfruit

salt and pepper, to taste

Slaw:

2 cups shredded red cabbage

2 tbsps. vegan mayo

1 tsp. BareOrganics Turmeric Root Powder

1 tbsp. pickle brine

salt and pepper, to taste

Kale:

1 tbsp. olive oil

2 packed cups shredded kale

Assembly:

4 buns

Vegan mayo

Stone ground or Dijon mustard to taste

Directions:

  1. To prepare the jackfruit, stir all the ingredients together in a medium bowl. Set aside.
  2. To prepare the slaw, stir all the ingredients together in a small bowl. Set aside.
  3. To prepare the kale, heat the olive oil at medium-high in a pan. Add the kale and sauté until wilted (2-3 minutes).
  4. Toast the buns.
  5. To assemble the sandwiches, spread your condiments of choice on the buns. You may choose to heat up the jackfruit but it’s also great at room temperature! Layer the sautéed kale, “pulled pork” and slaw on top.
  6. Enjoy right away!
