Cauliflower: The Trendy ‘It’ Veggie of 2019

In the last few years cauliflower has infiltrated nearly every aisle of grocery stores across the country. From pizza crust to rice, gnocchi and more, it has quickly become the star of low-carb and vegetable-based diets.

The Trend

Despite its versatility, cauliflower has experienced a rather lackluster existence. The plant has been around since the sixth century B.C. but typically hasn’t been used as more than a filler for a vegetable medley.

As an increasing number of people adopt plant-based diets, the quest continues for ways to substitute animal-products and unhealthy ingredients with vegetables and other un- or minimally processed foods. Cauliflower has many impressive properties including being waist-friendly and incredibly versatile.

Versatility

Unlike potatoes, which are naturally starch and calorie-heavy, cauliflower is naturally lower in calories and starch. Cauliflower’s natural starchiness makes it a perfect light, creamy substitute that can easily be whipped or mashed to mimic mashed potatoes.

Its versatility doesn’t end there, however. Cauliflower holds together well through virtually every form of cooking. Cauliflower can be pureed, roasted, boiled, fried, steamed, grilled and marinated. You can even cut up slabs of cauliflower and prepare them as you would a steak or other kind of meat.

Buffalo Cauliflower Bites

Ingredients:

6 cups of fresh cauliflower florets

2 tsp. garlic powder

a pinch of salt

a pinch of pepper

¼ tsp. BareOrganics Cayenne Pepper

½ tsp. BareOrganics Turmeric Root Powder

1 tbsp. butter, melted

1 cup hot sauce

Directions:

  1. Preheat oven to 450 degrees Fahrenheit. Spray a baking sheet with cooking oil, or olive oil. Set aside.
  2. Mix the garlic powder, salt, pepper, cayenne pepper, turmeric powder, melted butter, and hot sauce in a small bowl.
  3. Add the cauliflower to a bag or coverable dish, pour the buffalo sauce in and shake until the florets are fully coated. Spread on a baking sheet.
  4. Bake for 20 minutes.
  5. Serve with ranch or blue cheese dressing.
