    What Is Chayote?

    Chayote is a tropical vegetable that originated in Mexico and Central America. It’s often mistaken as a fruit, even though it is a member of the gourd family.

    Texture-wise, chayote is like jicama. When ripe, the pear-shaped vegetable is sweet and is a suitable substitute for apples in many common recipes, like this one for a Kale Apple Sunflower Salad. Many who’ve tried it say its taste lands between a potato, an apple or a crisp pear. Yum!

    Chayote & Noni Fruit Overnight Oats

    Servings: 1

    Ingredients:

    ½ cup rolled oats

    2 tbsps. unsweetened applesauce

    1 tbsp. plain Greek yogurt

    ½ tsp. pure maple syrup

    ¼ tsp. BareOrganics Noni Fruit Powder

    ½ cup milk of your choice

    ½ chayote, chopped

    Directions:

    1. Place all ingredients, except chopped chayote, in a wide-mouth mason jar (or bowl).
    2. Place lid on jar and shake until everything is well combined. (Or stir if using a bowl and then cover with plastic wrap.)
    3. Refrigerate overnight.
    4. When ready to serve, stir in chopped chayote and enjoy.
